When it comes to fuelling for a specific goal or performance, sometimes you’re needing the benefits of extra protein without the carbs, and this recipe has you sorted with a low-carb friendly protein bar that also tastes great!

INGREDIENTS
Top Layer
- 1 cup smooth peanut butter
- 3 tbsp coconut flour
- 2 tbsp plain or Vanilla WPI protein powder
- 3 tbsp LAKANTO Golden Raw Sugar Monkfruit Sweetener
Base Layer
- 1 cup smooth peanut butter
- 1/4 cup raw cacao powder
- 3 tbsp LAKANTO Golden Raw Sugar Monkfruit Sweetener
- 2 tbsp plain or Chocolate WPI protein powder
- 3 tbsp coconut flour
To Serve
- 1 cup dark chocolate, melted, to dip or drizzle
- 1 cup freeze-dried strawberries and raspberries, to sprinkle.
METHOD
1. Get started by preheating the oven to 170°C (340°F) and line a small loaf tin with baking paper.
2. Put the ingredients for the base layer in a bowl and mix well to combine. Use your hands to spread out into the base of the lined loaf tin.
3. Add the top layer ingredients to the bowl, knead well with your hand to combine and once mixed, add on top of the base.
4. Transfer to the oven and bake for 20 to 25 minutes or until the top of the bars have set and are beginning to brown around the edges.
5. Remove and let cool to room temperature before cutting and transfer the cut bars to the fridge to set firm, then dunk each in some melted chocolate then sprinkle the melted chocolate with some freeze-dried raspberries before it sets.
6. Store in the fridge for best results.
