Ingredients

Base 

  • 1 cup raw cashews or walnuts
  • 8 medjool dates
  • 1 tsp almond essence

Filling

  • 1 1/2 cups creamy peanut butter
  • 5 Tbsp Lakanto Classic Bakers Syrup
  • 1 tsp almond essence
  • 1 pinch salt

Topping

  • 340g Lakanto Dark Chocolate Baking Bits (Lakanto Chocolate Crumb)  SHOP CHOCOLATE NOW
  • 1 Tbsp Coconut Oil


Method

Base

  1. Line an 8x8 inch square baking pan with parchment paper.
  2. To make the crust. In a food processor, combine the walnuts, dates, and 1 teaspoon almond essence. Pulse until finely ground.
  3. Press the mixture into the prepared pan.

Filling

  1. In a medium bowl, mix together the peanut butter, Bakers Classic Syrup and remaining 1 teaspoon almond essence. Mix until smooth. Spread the mixture over the crust.
  2. Transfer to the freezer and freeze until firm, at least 1 hour.
  3. Once frozen, cut into 16 bars and arrange on a parchment lined baking sheet. Return to the freezer until frozen solid, at least 2 hours, preferably overnight.

Finishing/ Topping

  1. Melt the chocolate and coconut oil together in the microwave until melted and smooth stir gently frequently. Alternatively place into a medium metal bowl or heat resistant glass bowl and melt over a small pot with hot water stir continuously until smooth.
  2. Allow the chocolate to cool slightly for approx., 10 minutes.
  3. Remove the bars from the freezer and place onto a wire rack using a table spoon cover each bar with the chocolate and sprinkle with chopped nuts (optional).
  4. immediately put the bars into the refrigerator to set the chocolate approx. 20 minutes.
  5. Keep refrigerated and stored in an airtight container . Keep for 1-2 weeks

Tip

  • Add roasted peanuts, chopped or sea salt for sprinkling over the chocolate topping. 
  • Choc Pops, insert a skewer or popsicle stick into the bar before it freezes then follow (finishing/topping method) and place back in the freezer for a frozen responsiblysweet snack!!!
