The secret to the irresistible flavour of this granola lies in its carefully selected ingredients. A combination of sunflower seeds, pumpkin seeds, sesame seeds, rolled oats, flaked almonds, and a pinch of salt creates a delightful texture and a satisfying crunch. To enhance the sweetness without adding any sugar, we use our Lakanto Golden Malt Syrup, a natural and low-calorie sweet syrup that perfectly complements the other flavours.

Preparing this no added sugar granola is incredibly easy and requires just a few simple steps. Start by blending flaxseeds, water, golden malt syrup and cornflour until smooth. This mixture will act as a binder for the granola, ensuring that it stays together during baking. Next, combine the sunflower seeds, pumpkin seeds, sesame seeds, oats, and flaked almonds in a bowl, and gently mix them together. Pour the syrup mixture over the seed mix and fold it in until fully incorporated.

Spread the granola mixture onto a baking tray lined with greaseproof paper and bake it at a low temperature until golden and crunchy. This slow baking process allows the flavours to develop fully and ensures a perfectly crispy texture. Once cooled, store the granola in an airtight container, and it will stay fresh for up to 7 days.

INGREDIENTS

  • 220g sunflower seeds
  • 40g pumpkin seeds
  • 20g sesame seeds
  • 70g rolled oats 
  • 80g flaked almonds
  • pinch salt
  • 1/2 cup Lakanto Golden Malt Syrup
  • 1 2 tsp flaxseeds
  • 3 Tbsp water
  • 1/2 tsp cornflour

METHOD

  1. Combine the flaxseeds, water, golden malt syrup and cornflour into a small blender and blend until smooth. Put this to the side.
  2. Preheat your oven to 140c
  3. In a small bowl combine the sunflower, pumpkin, sesame, oats and flaked almonds give these a gentle mix until they are evenly combined.
  4. Take a medium sized baking tray with sides 30-40cm and place a piece of grease proof paper over it.
  5. Pour the syrup mixture over the seed mix in the medium bowl and gently fold the wet mixture until it is completely incorporated.
  6. Tip the mix onto the baking tray and flatten out place into the oven for approx. 20 minutes.
  7. Remove the baking tray and start to break up the granola into chunks and place back into the oven for another 20 minutes or until golden (This can take longer depending on your oven).
  8. When the granola is golden and crunchy remove it from the oven and allow it to cool, the granola should be dry and slightly sticky but not wet! If this has happened then turn the oven off and put the tray back in the oven and allow the residual heat of the oven help to dry the mix out.  (1hour)
  9. Once completely cooled place the granola into an airtight container. Use with in 7 days.

Tips:

  • You can add your favourite whole nuts like almonds, macadamia, peanut, walnuts. 
  • Use the granola to make a healthy coconut granola pot as pictured. 
  • Try using the granola as a cake base for your favourite cheesecake recipe by lightly crushing it and pressing it firmly into a cake tin, then topping with your cheesecake mix.
