Banana Pancakes with Hazelnut Butter

Fluffly, light and moist pancakes enriched with protein and all the good stuff!

Naturally Sweet | No Added Sugar

Makes : 10 x 80g Pancakes
Prep Time: 10 minutes
Cook Time: 4 minutes

Ingredients:

  • 1 cup plain flour
  • 1 tsps baking powder
  • 1 tsp bicarb soda
  • 1 cup water
  • 2 tbsp Lakanto Monkfruit Baking Blend
  • ¼ tsp  salt
  • ½ tsp cinnamon
  • 2 whole eggs
  • 4 tbsp coconut oil
  • 2 tbsp whey powder
  • 2 tbsp coconut yogurt
  • 3 tbsp - 50g unsalted butter
  • 2 tbsp - 20g Lakanto Monkfruit Pure Icing Powder
  • 2 tbsp - 20g hazelnuts

Method:

Pancakes:
1. Mix the flour and baking powder bicarb salt and Lakanto Monkfruit Baking Blend together in a bowl.
2. Add the milk and melted coconut oil lightly whisk.
3. Mix in the egg and mix until smooth. (blend for the best results.
4. Heat a medium sized non-stick pan over a high heat.
5. Add ½ tsp of coconut oil to the pan.
6. Use a large spoon or small ladle to add the pancake mix to the centre of the pan.
7. Once the pancake starts to form small bubbles on the surface it should be ready to flip.
8. Once golden place on a paper towel (remove excess grease)

Hazelnut Butter:
1. Lightly toast the hazelnut in a pan
2. Add the butter and Pure Icing Powder until golden
2. Blend until smooth and chill
4. Add to the top off the pancakes, along with any other toppings of choice.  Enjoy!
