INGREDIENTS
- 2 Cups Gluten Free Flour
- ½ Cup Monkfruit Classic Sweetener (ground)
- 1 tsp baking powder
- ¼ tsp baking soda
- 1 teaspoon vanilla essence
- 1 ½ Cups Milk
- 1 tsp apple cider vinegar
- 3 Tbsp Butter (Melted)
- 8 strawberries
METHOD
- Pre heat the oven to 200c.
- Combine all the dry ingredients together and place in a blender.
- Add the milk and cider to the mixture, followed by the melted butter.
- Cut the strawberries into 1/6s and fold through the batter.
- Use muffin cases and place into a muffin tin.
- Add 1 ½ tablespoons of batter per case or until just over half full.
- Place the tray into the oven and bake at 200c for 5 minutes.
- Turn the oven down to 150c and bake for a further 10-15 minutes or until cooked.
- For light sugarless dusting blend some of the sweetener into a powder and dust before serving.
