Halloween Cake pops with no added sugar!

Eat, drink, be scary!

Halloween is the perfect excuse to eat sweet treats... but who said they have to be unhealthy?  This one is from our friend and Chef Gunawan!

Makes

5 serves

Ingredients

  • 3 Eggs - separate into (3 egg yolk and 3 egg whites)

  • 30g Lakanto Baking blend

  • 30g Vegetable oil

  • 30ml milk

  • 60g Cake flour

  • 30g baking blend

  • No added sugar chocolate (melt for choc coating). (Click for Lakanto No Sugar Chocolate)

Method

  1. Pre heat oven 190°c

  2. Combine egg yolk with 30g Lakanto Baking Blend and whisk together. Add in oil, milk and whisk it then sift in cake flour over the top of yolk mixture.

  3. Whisk egg white and gradually add in sugar until it reach medium peak meringue.

  4. Fold the meringue into the yolk mixture.

  5. Bake for 10-12 minutes or until golden brown

To assemble

  1. Blitz the baked cake into food processor and then add in 2 tablespoon of softened butter until everything come together. Shape it in the ice cream cone mould and let it set.
  2. Roll the rest of the cake into ball shape.

  4. Dip in the melted chocolate and add Halloween decorations.
