This slice contains a wonderful combination of healthy fats, protein and carbohydrates, all with just the right level of sweetness from our new Maple Syrup. Our maple syrup is 100% naturally sweetened with no artificial colours or flavours, yum.
Ginger and turmeric are both great supports to the immune system with anti bacterial & anti inflammatory properties, so this is a great recipe to have up your sleeve when you're not feeling your best, plus the colour just makes the day brighter!

INGREDIENTS
BASE
- 1 cup oats
- 1 cup buckinis or buckwheat grouts, soaked and dried
- 1 cup desiccated coconut
- 1 cup dates, soaked
- 4 tsps fresh ginger, finely diced/grated
- 3 tsps fresh turmeric, finely diced/grated
- 1 tbsp coconut oil
- 1 tsp vanilla extract
- 4 tbsps Lakanto Maple Syrup
- A pinch of salt
ICING
- 1 cup desiccated coconut
- 1/2 cup cashew nuts
- ½ cup sesame seeds
- ½ cup hulled tahini
- 3 tsps grated ginger, finely diced
- 1 tsp ground ginger
- Juice from 1/2 of 1 small lemon
- 3 tbsps coconut oil
- 4 tbsps Lakanto Maple Syrup
- A pinch of salt
- 2 tbs cashew butter
METHOD
BASE
- Add all ingredients, except the buckwheat grouts, into your food processor or blender.
- Pulse until well combined, you may need to stop and scrape down the sides occasionally.
- Once all combined add the buckinis and give it a couple of pulses to slightly combine, but you want to keep them whole to get the crunch.
- Once all combined, press into a lined baking dish. Evenly press the mixture out and flatten it down.
- Put into the freezer to set while you make the icing.
ICING
- Add all of the ingredients into your food processor or blender and blend until all is combined.
- This may take a few minutes as the oils in the sesame seeds heat up and begin to form a creamy-like texture. Stopping to scrape down the sides will be needed.
- When all combined, remove and spread over the crunchy base.
- Evenly spread and press the mixture down.
- When done, put back into the freezer.
- For best results let it set overnight, however 2-4 hours if you're in a rush.
- Slice and serve when ready.
Notes
If you don't have fresh ginger and turmeric, 1 tsp of each in their powdered should be enough. Adjust to your taste.
