Blueberry and Lemon Cake (99% Sugar-Free)

A beautiful cake made responsibly sweet with 47% less carbs and 94% less sugar thanks to replacing the traditional sugar products with Lakanto Monkfruit Sweetened range.

Ingredients
For The Cake Mix:

  • 1 Lakanto Vanilla Cup Cake Mix 300g
  • 2 Large Eggs
  • 1 Large Egg Yolk
  • 90g Unsalted Butter, Melted And Cooled
  • 60mL Bakers Classic Syrup
  • Cooking Spray
For The Icing
  • 75 G Lakanto Pure Icing Powder
  • 1 1/2 Tbsp Lemon Juice
  • 1 Tbsp Lakanto Bakers Classic Syrup
To Decorate, Optional
  • 50 G (2oz) Blueberries
  • Pared Lemon Zest
  • Edible Flowers Assorted Berries, Sliced Fresh Fruit, For Garnish
Method
For The Cake
  1. Preheat the oven to 180c.
  2. Use a loaf tin and line with greaseproof paper.
  3. In Medium Sized Bowl Whisk the eggs and Milk. Melt the butter and then whisk the butter into the eggs. Add the Lakanto Vanilla Cup Cake mix and whisk until it forms a smooth batter.
  4. Fold in 100g (3½oz) of the blueberries and scrape mixture into prepared tin.
  5. Pour the batter into your prepared loaf tin scatter over remaining berries. Bake for about 1hr 1hr 10min, or until golden and a skewer inserted into the Centre comes out clean. Cool in tin for 10min, then gently ease out and leave to cool on a wire rack.
For the icing
  1. Mix icing ingredients in a small bowl until smooth, then drizzle over the cooled cake.
  2. Scatter over blueberries, lemon zest and edible flowers, if you like.

Serve in slices.
