Vegan Pumpkin Seed Bites

Quick, Easy Snack Recipe! 

A wonderful snack to have on hand for kids and adults alike. Full of zinc from the pumpkin seeds, calcium from the sesame seeds and the perfect amount of sweetness without the sugar thanks to Lakanto.

Vegan // GF // No Added Sugar // Low Carb //  

Serves 12 



  1. Lightly roast pumpkin seeds under the grill, or in a fry pan until light and puffy (keep an eye on them this doesn’t take long!). Preheat oven to 160 Degrees Celsius.
  2. Place warm roasted pumpkin seeds, sesame seeds, salt and Lakanto Golden Malt Syrup into a bowl. Mix to combine (make sure the seeds are still warm, this makes the mixture easier to work with). 
  3. Place mixture into a 20x20cm baking tin lined with baking paper. Spread mixture evenly across the tin (the mixture will stick together once it has cooled do no need to press into the tin).
  4. Bake for 20-25 minutes. Allow to cool in the tray.
  5. Cut into bite size pieces. Store in an airtight container for up to 1 week. 

Tip: If layering the bites in a container put baking paper between layers otherwise they might stick together!
