Ingredients
- 1 ½ Cups 250g Almond Meal
- 3 Tbsp 50g Shredded Coconut
- 2 Tbsp 40g Flax Meal
- 2 Tbsp 40g Flax Seeds
- 2 Tbsp 40g Chia Seeds
- 4 Whole Eggs
- 3-4 Tbsp 60g Coconut Oil
- 1 tsp 10g Baking Powder
- ¼ Cup 50mL Lakanto Bakers Classic Syrup
- 1 Cup 200g Lakanto Brown Sweetener
- 1g Salt
Method
- Combine the eggs and Lakanto Brown Sweetener into a mixer and beat until pale.
- Add the remaining ingredients all together then add the coconut oil
- Mix until it forms a dense paste
- Lay out a sheet of greaseproof paper and then put the mixture in a long sausage shape and roll up squeeze the ends to compress the dough and place in the fridge for a couple of hours.
- Remove and cut into disks, place these on a baking tray.
- Bake at 140-150 until golden remove and allow to cool.
