Chewy Caramel Cookies - (99% Sugar-Free)

Make: 14 Cookies 


  • 1 ½ Cups 250g Almond Meal
  • 3 Tbsp 50g Shredded Coconut
  • 2 Tbsp 40g Flax Meal
  • 2 Tbsp 40g Flax Seeds
  • 2 Tbsp 40g Chia Seeds
  • 4 Whole Eggs 
  • 3-4 Tbsp 60g Coconut Oil
  • 1 tsp 10g Baking Powder
  • ¼ Cup 50mL Lakanto Bakers Classic Syrup
  • 1 Cup 200g Lakanto Brown Sweetener
  • 1g Salt
  1. Combine the eggs and Lakanto Brown Sweetener into a mixer and beat until pale.
  2. Add the remaining ingredients all together then add the coconut oil
  3. Mix until it forms a dense paste
  4. Lay out a sheet of greaseproof paper and then put the mixture in a long sausage shape and roll up squeeze the ends to compress the dough and place in the fridge for a couple of hours.
  5. Remove and cut into disks, place these on a baking tray.
  6. Bake at 140-150 until golden remove and allow to cool.
