Chewy Caramel Cookies - (99% Sugar-Free)

A healthy fibre rich cookie snacks filled with chia, almond and flax meal with a chewy bite.

Makes: 900g cookie dough

INGREDIENTS

  • 1 ½ cups almond meal
  • 3 Tbsp shredded coconut
  • 2 Tbsp flax meal
  • 2 Tbsp flax seeds
  • 2 Tbsp chia seeds
  • 4 whole eggs 
  • 3-4 tbsp coconut oil
  • 1 tsp baking powder
  • ¼ cup Lakanto Bakers Classic Syrup
  • 1 cup Lakanto Brown Sweetener
  • 1g salt
METHOD
  1. Combine the eggs and Lakanto Brown Sweetener into a mixer and beat until pale.
  2. Add the remaining dry ingredients all together then add the coconut oil.
  3. Mix until it forms a dense paste.
  4. Spread out a piece of greaseproof paper and shape the cookie dough into a long, slender cylinder. Gently roll it up, applying pressure to the ends to compact the dough, and then refrigerate for a couple of hours.

  5. Pre heat your oven to 140-150c fan forced.
  6. Remove the cookie dough from the fridge and cut into disks, place these on a baking tray.
  7. Bake at 140-150 approx. 12-15 minutes or until golden remove and allow to cool.

Tip

for a twist spray the cookie disks with a small amount of water or brush with Lakanto bakers syrup and sprinkle some desiccated coconut over the top bake until golden.
