A delicious dessert recipe that’s full of flavour and all the good fats!
For best results, you will need an ice cream maker for this recipe.

Ingredients
Ice Cream:
- 4 egg yolks
- 2 tbsp coconut oil
- 2 tbsps ghee
- 1 cup almond milk
- 1 tsp vanilla extract
- ¼ cup Lakanto Monkfruit Icing Powder
- ½ tsp sea salt
- 3 tbsps raw cacao powder
Cookie Dough:
- 1 ½ tbsp almond meal
- 2 tbsps ghee
- 1 tsp vanilla extract
- 1 Tbsp Lakanto Monkfruit Baking Blend
- ¼ tsp sea salt
- 1 tsp MCT oil
- 1 handful sugar-free chocolate chips
- 1 tsp almond butter
Method:
- In a high-speed blender, blend all ice cream ingredients together. Then place in your ice cream maker.
- In a separate bowl mix cookie dough ingredient.
- Form into small balls of your own desired size.
- Top ice-cream with cookie dough balls and enjoy.
Note: if you do not have an ice cream maker, you pour the blended ingredients into a bowl, freeze, and then re-blend once frozen.
