INGREDIENTS

  • 300g Lakanto Chocolate Cake Mix
  • 2 whole eggs
  • 70g unsalted butter
  • 4 tbsps full fat milk
FROSTING
  • 1 cup thickened cream
  • 60g Lakanto Pure Icing Powder
  • 2 tbsps cocoa powder
  • shaved chocolate

METHOD

  1. Preheat the oven to 180c . Line a 12 cup muffin pan with cupcake liners. Line a second pan with 2 liners this recipe makes about 12 cupcakes. Set aside.
  2. In Medium Sized Bowl Whisk the eggs and Milk. Melt the butter and then whisk the butter into the eggs. Add the Lakanto Chocolate Cake mix and whisk until it forms a smooth batter. Add the milk until the batter is smooth and slightly loose.
  3. Pour or spoon the batter into the liners. Fill only halfway (this is
    imperative! only halfway!) to avoid spilling over the sides or sinking.
  4. Bake for 18-21 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow to cool completely before frosting.
  6. Once the cup cakes are cooled whisk the cream until it peaks then add the cocoa powder and icing powder until smooth. Put into a piping bag and pipe over the cupcake or cover in your desired pattern.
