Golden Sticky Toffee Pudding

Soft and sweet golden pudding soaked in a warm toffee sauce.

Everyone loves this reduced sugar Golden Sticky Toffee Pudding!

Makes: 6 toffee puddings

Pudding Ingredients:
¾ cup Lakanto Golden Sweetener
⅓ cup Lakanto Golden Malt Flavoured Syrup
1 whole egg
½ cup unsalted butter
1 ½ cups self raising flour 
¾ cup full fat milk
Pinch salt 

Toffee Sauce:
½ cup Lakanto Golden Malt Flavoured Syrup
½ cup double cream
2 Tbsp unsalted butter
Pinch salt 

Method:

  1. Preheat the oven to 160c.
  2. Mix the butter and golden sweetener together until smooth and creamy fold in the egg and flour until well combined.
  3. Add Lakanto Golden Malt Flavoured Syrup and a pinch of salt.
  4. Add the milk until it forms a smooth paste.
  5. Place the batter into 6 oven proof moulds.
  6. Place the moulds on a deep baking tray and add 1 ltr of hot water to the (Tray).
  7. Carefully place the tray in the oven and bake for 35-45 minutes depending on your oven.
  8. While the puddings are cooking heat the ingredients for the toffee sauce into a small pot and bring to the boil stir until smooth and the sauce forms small bubble (indicates that the sauce is about the right consistency).
  9. Once the puddings are cooked allow to cool slightly upside down they should just fall out. 
  10. Put as much or as little toffee sauce into the mould and return the pudding back to the mould to soak up the yummy sauce. Serve straight away or reheat at your leisure.
