  7. Cool in the pan 1-2 minutes, then remove cupcakes from pan (carefully) and finish cooling on a wire rack.
  8. Cool fully (about an hour) before frosting
 BUTTERCREAM

  1. In the bowl of an electric mixer, equipped with the whisk attachment, whip the butter on medium speed until it reaches a completely smooth consistency, which should take around 30 seconds to a minute.
  2. Introduce the cream cheese into the mixture and continue to whip until it becomes smooth.
  3. Gradually add 1/2 cup of Lakanto pure icing powder.
  4. Incorporate the vanilla and salt into the mixture.
  5. Blend thoroughly until all the ingredients are fully combined and the mixture becomes beautifully smooth and fluffy.
  6. Don't forget to scrape down the sides of the bowl as needed.
  7. Once ready, transfer the delightful frosting into a pastry bag and artfully pipe it onto the fully cooled cupcakes.
Tip. To Finish top with either orange or mandarin segments and a little zest.

Cupcakes have always been a beloved treat, and our Almond Orange Cupcakes take this classic dessert to a whole new level. The combination of almond and orange flavors creates a delightful and refreshing taste that will leave you craving for more.

To make these cupcakes, we start with a base of almond flour, which not only adds a delicious nuttiness but also makes them gluten-free. We then add in eggs, egg yolk, and a touch of sour cream to create a moist and fluffy texture. The addition of Lakanto brown sweetener, a natural sugar substitute made from monkfruit, gives these cupcakes their irresistible sweetness.

To enhance the citrusy flavor, we include freshly squeezed orange juice in the batter. This adds a burst of freshness that perfectly complements the almond undertones. The batter is then poured into muffin liners and baked until golden brown and perfectly risen.

But what's a cupcake without its frosting? Our buttercream frosting is the perfect finishing touch to these Almond Orange Cupcakes. Made with a combination of double cream, softened butter, cream cheese, and Lakanto icing powder, this frosting is creamy, smooth, and just the right amount of sweet. A hint of vanilla essence adds a subtle depth of flavor that will have you coming back for seconds.

Once the cupcakes have cooled, it's time to get creative with the frosting. Using a pastry bag, pipe swirls of buttercream onto each cupcake, creating a visually stunning and mouthwatering treat. The combination of the fluffy cupcake and the creamy frosting is a match made in heaven.
