CAKE MIX
- 1 cup almond flour
- 2 large eggs
- 1 large egg yolk
- 110g unsalted butter, melted and cooled
- 1/3 cup sour cream (softened)
- 50mL full fat milk
- 100g Lakanto Monkfruit Brown Sweetener
- 80ml orange juice
BUTTERCREAM
- 2 tbsp double cream
- 1/2 cup softened unsalted butter
- 2 tbsp cream cheese
- 1/2 cup Lakanto Icing Powder
- 1/2 tsp vanilla essence
METHOD
- Preheat the oven to 160C.
- In medium-sized bowl. whisk the eggs, egg yolk and milk. Melt the butter and then whisk the butter into the eggs.
- Add the softened sour cream until smooth.
- Add the almond flour and orange juice, whisk until it forms a smooth batter.
- The batter should be thin. If it is still a little thick add some more orange juice or milk. Pour batter into a muffin pan prepared with paper liners. Fill liners about 2/3 full.
- Bake cupcakes in pre heated oven for 12-15 minutes, or until they are just slightly golden brown on the edges and a toothpick inserted in the center of a cupcake comes out clean.
- Cool in the pan 1-2 minutes, then remove cupcakes from pan (carefully) and finish cooling on a wire rack.
- Cool fully (about an hour) before frosting
- In the bowl of an electric mixer, equipped with the whisk attachment, whip the butter on medium speed until it reaches a completely smooth consistency, which should take around 30 seconds to a minute.
- Introduce the cream cheese into the mixture and continue to whip until it becomes smooth.
- Gradually add 1/2 cup of Lakanto pure icing powder.
- Incorporate the vanilla and salt into the mixture.
- Blend thoroughly until all the ingredients are fully combined and the mixture becomes beautifully smooth and fluffy.
- Don't forget to scrape down the sides of the bowl as needed.
