Raw Nut Free Muesli Bars

School friendly snacks that are highly likely to not come back home in the lunchbox, but also great for adults to take to work too!

Ingredients:


Slice
1 cup rolled oats
1 cup desiccated coconut
1/4 cup sesame seeds
1/2 cup pumpkin seeds
1/2 cup dried apricot
1/2 cup dried cranberries
125 g salted butter
1/2 cup Lakanto Golden Malt Syrup
1/4 cup Lakanto Golden Sweetener 

Chocolate sauce
¼ cup Lakanto Chocolate Topping
¼ cup Sugar Free Choc Chips 

Method:

  1. Toast oats, coconut, and  seeds in a non stick frypan over medium heat, stirring frequently for 5-8 minutes or until golden. Transfer to a large bowl to cool, then stir in dried fruit.
    Add butter, Lakanto Golden Malt Syrup and Lakanto Golden Sweetener to the frypan and cook stirring for 2-3 minutes until nice and sticky. Bring to the boil and simmer over low heat for 5-7 minutes, without stirring, until thickened and glossy.
  2.  Stir butter mixture into dry ingredients and spoon into a lined 25cm x 16cm slice pan and press down firmly. 
  3. Here you can either choose to bake the slice or leave it raw. 
  4. Raw: Place in the fridge or freezer for a few hours to set. Cut into bars and drizzle on chocolate sauce. 
  5. To make chocolate sauce melt the choc chips then stir in Lakanto Chocolate Topping until combined. Drizzle with a small spoon or small piping bag. 

Tip: Sprinkle some chia seeds on top of the choc drizzle for an extra omega 3 hit.
Baked Option: Place in the oven at 180 for 20 mins or until the top is golden.
Cool completely before cutting into bars and drizzling on the chocolate sauce.
