Off the booze? Here's a clean, green and low-sugar mocktail!
The amazing Mindful Mocktail has created the best alternative to a mojito! It has ginger for a bit of a kick, cucumber and lime for some freshness and Lakanto sweetener to add a touch of sweetness without sugar.

INGREDIENTS

30mls Lakanto Classic simple syrup

2cms grated ginger
-
4cms grated Lebanese cucumber

1 tablespoon fresh lime juice

8 mint leaves

200-250mls soda water
METHOD
To make the simple syrup:
- Blend the Classic Lakanto Monkfruit Sweetener in a blender for about 30 seconds until it resembles icing powder.
- In a small saucepan, combine sweetener and water over low heat. Stir gently until the sweetener dissolves. Keep the heat low and don't let the mixture boil.
- Chill the simple syrup in the fridge until ready to use. You will have enough for 3-4 drinks.
To make the mocktail:
- Muddle ginger, cucumber and lime in a bowl or jug. If you don't have a muddler, you can use the back end of a wooden spoon or similar.
- Clap mint together in your hands until the scent is released, then add to the mixture. Press the mint gently with the muddler a few times.
- Using a small strainer, strain the mixture into a glass. Press down on the mixture so all juices are released.
- Add simple syrup to the mixture and stir.
- Add ice and top with soda water. Adjust sweetness by adding more simple syrup if you wish. Stir, garnish and serve.
