1. Place blueberries, lime juice and maple syrup into a cocktail shaker or mason jar and muddle until the juice is released from the blueberries. 2. Clap the mint together in your hands until the scent is released, then add to the mixture. Press the mint gently with the muddler a few times. 3. Strain into an ice filled glass and top with soda water or your favourite kombucha. 4. Adjust sweetness by adding some extra maple syrup if desired. 5. Garnish and serve.
Lakanto tip: if you prefer, you can complete the first two steps in your serving glass and omit straining the mixture. The blueberry and mint pieces taste delicious when left in the drink.
