INGREDIENTS:

1.5 kg ripe tomatoes, coarsely chopped

1 large onion, coarsely chopped

6 whole cloves
-
¼ tsp allspice

1 Tbsp sweet paprika
-
1 clove garlic, sliced
-
1/2 cinnamon stick
-
1 ½ cups Lakanto Golden Sweetener
-
4 Tbsp Lakanto Golden Malt Syrup
-
½ cup red wine vinegar
-
1 Tbsp Worcestershire sauce
-
2 ½ Tbsp dry mustard
-
2 tsp paprika (or smoked paprika)
-
½ tsp salt or to taste
-
1 ½ tsps black pepper
METHOD:

Place the chopped tomato, onion, spices and salt in a large saucepan over medium heat.

Stir for 5-10 minutes to release the flavours and develop a light roasted flavour note.

Bring to the boil, simmer on a low heat uncovered, stirring occasionally, for 30 minutes or until the tomato breaks down and is tender.

Add the sweetener and vinegar. Simmer, uncovered, stirring occasionally, for a further 30 minutes until the sauce reduces and thickens and is of a heavy consistency. Adjust seasoning.

Strain mixture through a coarse sieve into a large bowl, in batches, pressing down strongly to extract as much liquid as possible. Discard solids. Pour hot mixture into sterilised bottles. Seal.

Store in a cool, dark place until ready to use. Once opened, store in the fridge.
Tips:
- For a thicker sauce add 1-2 tsps of cornflour during step 2 diluted with 2 Tbsp water.
- For a smokier sauce add a few drops of hickory smoke liquid....
