Gluten Free Strawberry Muffins

Delicious gluten and sugar free muffins perfect for a snack or a light breakfast!

Makes: 900g
Serves 12-14
Difficulty Level easy

INGREDIENTS

  • 2 Cups Gluten Free Flour
  • ½ Cup Monkfruit Classic Sweetener (ground)
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 teaspoon vanilla essence
  • 1 ½ Cups Milk
  • 1 tsp apple cider vinegar
  • 3 Tbsp Butter (Melted)
  • 8 strawberries

METHOD

  1. Pre heat the oven to 200c.
  2. Combine all the dry ingredients together and place in a blender.
  3. Add the milk and cider to the mixture, followed by the melted butter.
  4. Cut the strawberries into 1/6s and fold through the batter.
  5. Use muffin cases and place into a muffin tin.
  6. Add 1 ½ tablespoons of batter per case or until just over half full.
  7. Place the tray into the oven and bake at 200c for 5 minutes.
  8. Turn the oven down to 150c and bake for a further 10-15 minutes or until cooked.
  9. For light sugarless dusting blend some of the sweetener into a powder and dust before serving.
