INGREDIENTS
- 1 ½ cups almond meal
- 3 Tbsp shredded coconut
- 2 Tbsp flax meal
- 2 Tbsp flax seeds
- 2 Tbsp chia seeds
- 4 whole eggs
- 3-4 tbsp coconut oil
- 1 tsp baking powder
- ¼ cup Lakanto Bakers Classic Syrup
- 1 cup Lakanto Brown Sweetener
- 1g salt
METHOD
- Combine the eggs and Lakanto Brown Sweetener into a mixer and beat until pale.
- Add the remaining dry ingredients all together then add the coconut oil.
- Mix until it forms a dense paste.
- Spread out a piece of greaseproof paper and shape the cookie dough into a long, slender cylinder. Gently roll it up, applying pressure to the ends to compact the dough, and then refrigerate for a couple of hours.
- Pre heat your oven to 140-150c fan forced.
- Remove the cookie dough from the fridge and cut into disks, place these on a baking tray.
- Bake at 140-150 approx. 12-15 minutes or until golden remove and allow to cool.
Tip
for a twist spray the cookie disks with a small amount of water or brush with Lakanto bakers syrup and sprinkle some desiccated coconut over the top bake until golden.
