Ingredients

Cake Batter

  • 2 x 300g Lakanto Chocolate Cake Mix 
  • ½ tsp ground cinnamon
  • ½ teaspoon salt
  • 4  eggs, lightly beaten
  • 1/2 cup melted coconut oil
  • 1 cup full fat milk 
  • 1  1/2 cups mashed ripe bananas (about 2-3 medium bananas)
Caramelised Nut Mix 

Method:

Banana Bread

  1. Preheat oven to 170ºC. Grease a 9x5 inch loaf pan and set aside.
  2. In a medium bowl, whisk the Lakanto Chocolate Cake Mix cinnamon and salt. Set aside.
  3. In a large bowl, whisk eggs, coconut oil, milk for 2 minutes. Stir in the mashed banana and then slowly add in the dry cake mixture.

Nut Mix

  1. In a small pan add 4 Tbsp Lakanto Icing Powder and 3 Tbsp cold water, over a low heat bring this to a simmer.
  2. Add in the nuts and allow the syrup to coat the nuts evenly and start to colour.
  3. Remove from the heat.

To Cook

  1. Pour the cake mixture into greased loaf pan.
  2. Bake for 10 minutes then remove from the oven and top with the nut mixture evenly.
  3. Return the loaf tin back into the oven for a further 40 minutes or until a inserted skewer comes out clean.
  4. Cool for 10 - 20 minutes, slice  and enjoy!

Tip: Refrigerate the Banana Bread overnight then slice and toast serve with butter.... Yum!!!!
