Low Carb Cranberry Jelly

Serve a favourite condiment at Christmas dinner that has 75% less Sugar, is low carb AND keto!

Who doesn't want 4g or 1 teaspoon of sugar less on your dinner plate?

Makes 1.2Ltr

Prep Time: 10 Minutes Prep, 2 Hour Chill Time

Ingredients

  • 2 Tbsp Sugar Free Cranberry Concentrate (Dynamic Health)
  • 1Ltr Water
  • 1 Cup Lakanto Baking Blend
  • 2 Tbsp Vegan Gelatine Powder
  • 4 Tbsp Chopped Dried Cranberries
Method:
  1. Add the Cranberry concentrate, water and Lakanto Baking Bend to a pot and stir.
  2. Heat the Cranberry Juice with the Syrup until warm. Note: Do not Boil
  3. Dissolve the Gelatine in 4 Tbsp hot water and add to the Cranberry Juice
  4. Allow the mixture to cool slightly
  5. Place in a bowl or serving dish
  6. Cool for 30 minutes in the fridge and add the chopped cranberries
  7. Stir the mixture just before it begins to set
  8. Use as required
