INGREDIENTS:
- 200g long red chili
- 2–3 red bird’s-eye chili,
- 5 cm piece ginger, peeled,
- roughly chopped
- 8 garlic cloves, peeled
- 2 cups Lakanto Baking Blend or Lakanto Golden Sweetener
- 2 cups white vinegar
- 100ml Water
- 2 tbsp soy sauce (Optional it can be added at the end of cooking as a seasoning)
METHOD:
- Combine the 2 different types of chilies', ginger and garlic in the bowl of a small food processor and process until finely chopped.
- Combine the sweetener and vinegar in a saucepan over a low heat and stir without boiling until the sweetener has dissolved.
- Add the chili, garlic and ginger paste to the sweetener syrup and simmer for 25–30 minutes until thickened.
- Pour into sterilised bottles and when cool store in the refrigerator for up 1 month.
