Tomato Sauce (98% sugar free)

INGREDIENTS:

2 kg ripe tomatoes, coarsely chopped
1 large onions, coarsely chopped
6 whole cloves
1 tsp  ground allspice
1 tbsp sweet paprika
1 clove garlic, sliced
1/2 cinnamon stick
1 tbsp salt
1 tbsp corn flour
1/4 cup water
1 1/2 cups Classic Lakanto Monkfruit Sweetener
2 cups (clear) white malt vinegar

 

METHOD:

  1. Place tomato, onion, cloves, all spice berries, paprika, garlic, cinnamon and salt in a large saucepan over medium
    heat.
     
  2. Cook for approx. 5-10 minutes to release all the flavours and allow the tomatoes to develop a light caramelised taste.

  3. Bring to the boil. Simmer, uncovered, stirring occasionally, for 1 hour or until the tomato breaks down and is tender.


  4. Add the sweetener and vinegar. water, and cornflour. Simmer, uncovered, stirring occasionally, for a further hour or until the mixture reduces and thickens . Adjust seasoning.


  5. Strain the sauce through a coarse sieve over a large bowl in small batches, pressing down strongly to extract as much liquid as possible.


     
  6. Discard solids. Pour hot mixture into sterilised bottles allow to cool for approx 30 minutes at room temperature before you close the lid this help reduce the heat and stops any moisture falling back into the sauce which cause it to be thinner than you may like.
  7. Seal the container or Jar and Store refrigerated. Keep refrigerated once opened.
Tips
  • You can adjust the amount of white vinegar to taste, the vinegar acts as a natural preservative giving you more time to enjoy your sauce assuming it lasts that long.....
  • Tomatoes are naturally full of water and depending on the time of season they can be juicy or drier so you can adjust the amount of water depending on the tomatoes. 
  • If you have a blender you can blend the sauce, put it back into the pot bring back to the boil then pass it though a medium sieve and you will have a velvety smooth sauce, alternatively for an almost relish style sauce simply don't pass through a sieve and simply put into kilner jars and cool in the refrigerator.
